Quick answer: no single material wins every column. Elastic surfaces (rubber, TPU) keep knives sharpest; non-porous, groove-resistant surfaces are most hygienic; dishwasher-safe narrows the field to hard plastic and TPU. The chart below puts the actual numbers side by side so you can pick by what you value. Where a number is a published standard or lab figure, it's cited.

How to read the chart: want the sharpest knives with zero upkeep and dishwasher cleaning? The elastic + dishwasher-safe intersection is TPU. Want maximum mass for a heavy butchery station? A rubber block. Want it beautiful on the counter? Wood, and accept the oiling. There is no cheat that wins all four.
